The approach to food in Vietnam is simple but fresh. Relying on fresh vegetables, flavourful plants and herbs such as coriander, ginger and lemongrass, as well as fish sauce and soy sauce, this delicate cuisine is known for its health benefits and inspired balance of flavours. While there are many foods you'll want to sample when travelling through Vietnam, some of the classic dishes you won't want to miss include:

phở - Considered to be Vietnam's national dish, the flavours of this delicious chicken or beef based soup are intensified with the addition of fresh herbs and spices and hours of simmering. Add thick rice noodles and the tasty soup becomes a meal.

 Bo kho – Vietnam’s French character comes out in this dish. The hearty beef and vegetable stew is served with a baguette for dipping.

Cơm chiên Dương Châu – One of Vietnam’s most popular plates, this fried-rice dish is usually served with prawns, egg, scallions and fresh vegetables such as peas and corn.
